Finally, something I can comment on :)

Cowboy bebop is one of those love it or hate it things.  It is 
considered a classic by many.
If you want some Anime that's more historical and less fantasy, try some 
films like Grave of the Fireflies, Tokyo Godfathers, and Millenium 
Actress.  Very moving.
For a 'non-fantasy' Anime series, I personally loved Honey and Clover 
and it's second season Honey and Clover II.  It's a little childish in 
some respects, but it's also about a young man finding himself, and can 
be interpreted on multiple levels.  That's plenty to keep you busy for a 
while.

Here's a list of the Anime I'm currently watching/will watch/have 
watched.  The Anime Encyclopedia at AnimeNewsNetwork is very helpful in 
finding common directors/producers/actors you may like.
